The national dish of El Salvador is versatile, with many filling options. We went the traditional route here.


Pupusa
These pan fried, savory corn griddle cakes can be filled with just about anything, but ours are a savory bean and cheese combination.

Featured technique: Pupusa Shaping
The traditional way to form a pupusa starts with a palm-sized tortilla of dough (masa). Add a spoonful of filling to the center, and fold the edges up into a package. Rotate and gently pull the center up to remove excess masa, then re-flatten to form the final pupusa shape.
